If...The alcohol is just to keep the ice cream soft. If you use an extract it will still add the alcohol percentage you need to keep it soft. Extracts are at least 75% alcohol which is wayyyy higher than actual liquor (which 1) would make more of an impact and 2) would severely impact your chemistry). If you use an extract you should only use 1 teaspoon rather than the 1 tablespoon of alcohol. You can't taste the alcohol and it isn't even close to enough to make any difference to the human body. It's essentially 0.5 oz distributed throughout 32oz of ice cream. I hope that helps! Let me know how it turns out for you!
